5–6 cherry tomatoes, whole or halved
½ avocado, cubed
½ cup cooked protein (I use tofu, rotisserie chicken, or edamame)
1 tablespoon roasted sunflower seeds (or pumpkin seeds / crushed almonds)
1 small spoon feta or parmesan (optional, adds flavor fast)
A dash of black pepper (optional)
I keep this in a jar in my fridge all the time. Shake and pour:
1 tbsp olive oil
1 tsp lemon juice (or apple cider vinegar)
1 tsp honey or maple syrup
(Add a pinch of salt and pepper if you like)
✅ Step 1: Grab your lunch container or bowl
✅ Step 2: Throw in all the salad ingredients (no fancy layering)
✅ Step 3: Drizzle the dressing on top, toss with a fork, and DONE.
No chopping board, no mess. I literally do this while waiting for my coffee machine to warm up.
I pre-cube my avocado at night and toss it with a bit of lemon juice so it doesn't brown.
