Preparation Method:


1. Heat the Oil: Begin by heating a small amount of oil in a pan. Add the ingredients from Ingredients A (excluding the grated coconut)—curry leaves, green chilies, ginger, red onions, and garlic. Sauté them until they soften and release their aroma.


2. Add the Grated Coconut: Next, add the grated coconut into the pan and stir-fry it for a few minutes until the coconut becomes slightly dry.


3. Blend the Mixture: Once the sautéed ingredients have cooled down, transfer them into a blender. Add a small amount of water and blend the mixture until it becomes smooth. Ensure that the consistency is neither too runny nor too thick.


4. Prepare the Tempering: In a separate pan, heat oil and add Ingredients B—sliced red onions, dried chilies, curry leaves, and mustard seeds. Sauté them until they become fragrant and slightly crispy.


5. Combine Everything: Once the tempering has been cooked, add the blended coconut mixture from Ingredients A into the pan with the tempering from Ingredients B. Stir everything together well and cook until all ingredients are fully combined and well-cooked.


6. Simmer and Adjust Consistency: Allow the chutney to simmer for a few minutes until it thickens to your desired consistency. Once it reaches the perfect texture, it's ready to serve.
